K7 is a special blend of food phosphates, which perform a number of functions in meat and poultry products, including increasing moisture retention, aiding emulsification, binding meat particles, accelerating cure and color development and protecting flavor Preventing microbial growth. These functions are accomplished through pH modification, increase in ionic strength, metal sequestration and interaction with meat proteins.
