Actually, the chief brewer likes this sake. This fragrant junmai ginjo sake is brewed with locally-grown sake rice. It has a rich taste, but is smooth and light. The umami and acidity are very well-balanced, so many of the young brewery workers like it too. It received high praise at The Fine Sake Awards Japan, and we'd love for more and more young people to drink this sake.
Taiwa-cho, where the brewery is located, is a land of fertile nature, with three dams and seven connected mountains known as "Nanatsumori." It's here that we find the Taiwagura Sake Brewery which uses the name of the scenic Matsushima in their products. Yuki-no-Matsushima Extra Dry +20, which could be said to be the brewery's representative product, is the driest sake in Japan, and the "extra" refers to not just the dryness, but also the extra work required to produce it using the closely-guarded secret recipe. They also have a refreshingly sweet sake, made on a request from the brewery owner (who also likes sweet sake) to the chief brewer, that really hits the spot with its full-bodied sweetness of rice and fragrance of koji. They may have the image of a famous brewery that puts out a large amount of sake, but they use cutting-edge technology to perform fresh stock rotation. A human touch is necessary for such an operation, including human senses, judgment, and determination. This brewery will never be fully-reliant on machines. This isn't saying that machinization is a bad thing, simply that Taiwagura aims to hone the senses of the people who use the machines. The consistent quality of their products and the way they add flavor to seasonal sake are incredible. Autumn's "Hiyaoroshi," a new sake with the fragrance of fermentation mash, exudes a sense of ripeness. Currently, the owner is attempting to train young workers who will maintain the legacy of Yuki-no-Matsushima. Under the instruction of Nanbu Toji veterans, those young brewers are giving their all learning, feeling, and connecting with those skills every day.
