Lactase, mainly characterized by hydrolyzing lactose into glucose and galactose. The optimal pH value is 7.0-7.5 for E. Coli; The amount of yeast produced is 6.0-7.0; The yield obtained by mold is around 5.0. The optimal characteristic temperature is between 37 and 50 ℃. Under normal usage concentration, approximately 74% of lactose can be hydrolyzed within 72 hours.
