B-amylase is a highly efficient enzyme preparation extracted from plants. It uses starch as substrate to produce maltose by hydrolyzing A-1, 4-glucoside bond sequentially at intervals from the non-reducing ends of starch under certain conditions.




When β-amylase acts on amylose, if the starch molecule consists of an even number of glucose units, the final hydrolysate is all maltose. If the starch molecule consists of an odd number of glucose units, the final hydrolysate contains a small amount of glucose in addition to maltose. When β-amylase acts on amylopectin, the products are maltose and β-dextrin.
In addition, when β-amylase hydrolyzes starch, because there are always macromolecules from the end of the molecule, the viscosity drops very slowly, and it cannot be used as a liquefaction enzyme.
