Meaning of P.G.I. (I.G.P. in Italian)
The term "protected geographical indication", better known by the acronym P.G.I. (in Italian language I.G.P.), indicates a mark of
origin that is attributed by the European Union to those agricultural and food products for which a certain quality, reputation or
other characteristic depends on the origin geographic, and whose production, transformation and/or processing takes place in a
specific geographical area.
Therefore, to obtain the P.G.I., at least one phase of the production process must take place in a particular area. Those who
produce P.G.I. must comply with the strict production rules established in the production specification, and compliance with these
rules is guaranteed by a specific control body (in this case it is the Ministry of Agriculture of Italy).

BACI DI DAMA CLASSICI (Classic «Baci di Dama» biscuits)
«Baci di Dama» biscuits are a typical and traditional Piedmont biscuit.
They are made with Piedmontese hazelnuts and chocolate basing on an ancient traditional recipe.
«Baci di Dama» means “Lady’s kisses” and this name is due to the typical form of the biscuit which reminds of two lips (made of hazelnut pastry) ready to kiss, with a dark chocolate filling between the two lips.
One of the best Italian biscuits.


CHOCOLATE FROM PIEDMONT (ITALY)
Cocoa arrived in Europe after the discovery of America and was always considered "the food of the gods".
Italy is one of the countries where experimentation and creation of new chocolate products proliferated since the 1800s.
Initially, chocolate was very expensive and therefore reserved for wealthy social classes.
In Italy, the Piedmont region and its capital Turin were always at the forefront in the production of new chocolate products thanks to the presence on the territory of the P.G.I. Piedmont Hazelnut and of the high skills in the treatment of imported coffee. The Piedmontese chocolate masters had at their disposal these two ideal complementary products (hazelnuts and coffee) to
mix with chocolate and experiment new solutions. The "chocolate shops" of Turin and Piedmont used to be in competition with each other to modify the existing chocolate recipe by inventing new versions to offer on the market. Gianduja chocolate was an invention of some master chocolatiers from Turin who mixed chocolate with Piedmontese hazelnuts, creating a product that is now
famous throughout the world.
In the 1900s, thanks to the collapse of the price of cocoa and sugar, the abolition of government taxes and the liberalization of the cocoa trade, many artisan laboratories were born and spread. Chocolate quickly became a product that could also be consumed by the middle class too. It was with the industrialization of chocolate production that the so-called "food of the Gods" turned into a sweet pleasure for everyone. All Piedmontese producers, with their experience and skills, saw and grabbed a wonderful market opportunity.
Still today Piedmontese chocolate masters are very creative and the best in finding always new solutions to produce traditional products with modern and trendy details.
