In the processing of black tea, the tea pigment is formed by polyphenol type substances oxidized and polymerized. It contains theaflavins TFs, thearubigins TRs and theabrownine TB. Catechin forms theaflavins after oxidation, deoxidization and polymerization. Thearubigins is the production by oxidation and polymerization of theaflavins and some catechin. And thearubigins forms theabrownine by further oxidation and polymerization.
The most important pigment in tea pigment is theaflavins category which has various structures. The found and verified theaflavins have 13 types mainly FT1, TF-3-G, TF-3´-G, TF-3,3´-DG etc.
Theaflavins abstraction shows orange powder and crystal and is easy to be dissolved in water, methanol, ethanol, acetone, and acetic acid but hard to be dissolved in ether and cannot be dissolved in chloroform and benzene.
