INTRODUCTION AND HISTORY

 

The nougat and marzipan are the most common sweet at Christmas. Nougat mass is obtained by cooking honey and sugar, with or without egg white or albumin, adding toasted almonds, peeled or skin.

 

The origin of the nougat of which dates back to the eleventh century in the Arabian Peninsula and by the Arabs was brought to the Iberian Peninsula and the Italian peninsula. The Spanish version of nougat was born in the province of Alicante around the fifteenth century under Charles V and was a famous sweet.

 

As for marzipan, whose name etymologically comes also from Arabic, but there is a legend that his recipe was created by Christians in the Toledo area. It is thought that the first marzipan were the work of the nuns of San Clemente, who invented when Toledo was besieged by the Arabs, to appease the hunger of the besieged population, creating a pastry with almonds and sugar. This pastry was called “Pan de Maza”. Spain is the first country in the world as an exporter of nougat and marzipan.

Almond is an important component in the Mediterranean diet. Almonds have a high nutritional value and their composition are between proteins (20%), fiber (14%) and fat (53.5%), largely in the form of oleic acid.
