What does our matcha contains ?

Even though the farm in implanted in Shizuoka, the raw leaves come from Kagoshima,

the No.1 Organic Matcha cultures area.
The leaves are then directly transported to Shizuoka where the chairman implanted the farm to be processed and turned into matcha.

Shizuoka is the N.2 area to grow non-organic matcha,

but this area is not suited at all to grow organic matcha.
Kagoshima, unless Shizuoka is ideally suited to grow Tencha tea bushes due to the soil and adequate weather conditions. It is also very far from any radiation which is why there is no better place in Japan to grow safe and organic cultures.

 

Leaves shaded four 4 weeks & hand picked
During the last four weeks of their lives, the Tencha trees are shaded from direct sunlight by bamboo mats, after that the best leaves of the plants are hand picked

(only the bud and top three leaves).
All sorts of chemical changes take place in the plant during the shading period :
More amino acids and other compounds responsible for the distinctive aroma and flavor of the matcha, as well as chlorophyll which renders their leaves an extremely dark hue of green.
