Description
FA-280 is made from Aspergillus oryzae var through submerged fermentation and refining extraction technique. It can be used for starch liquefaction and saccharification to produce maltose and glucose. It is an endoamylase rapidly hydrolyzes the interior α -1, 4 glucosidic linkages of gelatinized starch, amylose and amylopectin solution and produce soluble dextrin and a small quantity of glucose and maltose. It also produces syrups of high maltose and a small quantity of glucose if the reaction lasts for longer. It is applied to maltose, beer brewing, food baking, etc.

Effect of pH
Optimum pH 4.8 to 5.4; Effective pH range 4.0 to 6.6
Effect of Temperature
Optimum temperature ranges from 45 to 55ºC; Effective temperature range 45 to 65ºC. Optimum temperature is 50ºC.
Inactivation
Inactivation can be achieved by raising the temperature to 90 to 100º C for 5 to 10 minutes. If the content of starch is higher, this product can be inactivated by keeping the temperature at 80º C for about 30 minutes, or 70º C for about 60 minutes. If inactivation by high temperature is not desirable, another option of inactivation is to decrease the pH below 4.0. Inactivation can also be realized by adjusting pH and temperature at the same time.
Inhibitors
Copper and lead ions are strong inhibitors. Zinc, nickel and iron ions are moderate inhibitors.
Substrate
FA-280 fits to saccharify corn, potato, tapioca, wheat, soyabean and starches from other resources. It hydrolyzes effectively if the content of starch is less than 50%(DSB).
Dosage
Dosage depends on the desired maltose content in the final syrup and the saccharification time available. Typical dosage of FA-280 is from 75 to 500 grams per ton DS.
Storage
This enzyme has been formulated for optimal stability. Typical shelf-life is six months provided being stored below 25°C in its original packaging, sealed and unopened, protected from the sunlight. Its shelf-life will be eighteen months if this product is stored properly at 0~10°C. Prolonged storage and/or adverse conditions such as higher temperatures may lead to a higher dosage requirement.
Safety & Enzyme Handling
Inhalation of enzyme dust and mists should be avoided. In case of contact with the skin or eyes, promptly rinse with water for at least 15 minutes. For detailed handling information, please refer to the appropriate Material Safety Data Sheet.
