 Alpha-Amylase


Bacterial Alpha-Amylase is made from Bacillus subtilis Var. using submerged fermentation, extraction and refining technology. It is an endoamylase which can rapidly decrease the viscosity of the gelatinous starch solution by randomly hydrolyzing starch, glycogen and its degradation products within the α-1, 4 glycosidic bonds and produce soluble dextrin and oligosaccharides. Excessive hydrolysis may produce a small quantity of glucose and maltose.


Fungal alpha-amylase


Fungal Alpha-Amylase is a high activity fungal alpha-amylase derived from non-genetic modified strains ofAspergillus oryzae var. using submerged fermentation and refining extraction techniques.  It has been specifically designed for the baking industry as a bread improver and alpha-amylase supplement for flour. As an endoamylase, FAA-5000 can rapidly hydrolyze the interior α-1, 4 glucosidic linkages of gelatinized starch, amylose and amylopectin solutions to produce soluble dextrins and small quantities of maltose and glucose.


Glucoamylase


Glucoamylase is made from Aspergillus niger using submerged fermentation, extraction and refining techniques. It has a high conversion rate from starchy substrates into fermentable sugars. It can hydrolyze α-D-1, 4 glucosidic bonds from the non-reducing end of starch one after. It can also hydrolyze the α-D-1, 6 glucoside branch bonds of starch and cleaves the α-1, 3 bonds to release glucose.


DESCRIPTION


Pullulanase  made from Bacillus licheniformis (Bacillus licheniformis) by submerged culture, refine and extraction processes. It is so-named because of its specific hydrolysis of pullulan (maltotriose, α-1, 6 glycosidic bond linking polymer). It is amylase that can specifically cleave the α-1, 6 glycosidic bond of the branching point of amylopectin, and cut out the entire branch structure to form amylose.
It is mainly used together with glucoamylase to produce high glucose syrup and high maltose syrup from liquefied starch.
