1. Food processing industry
① can apply to animal protein hydrolysis with high AN%, high degree of hydrolysis and special flavor. It can also be used to produce HAP and HVP for high grade flavoring and food enhancer.
Hydrolysis condition：50—55℃， PH 6.0—7.0， 0.3—1% adding according to total meat.
② baking industry’s application, can be used to produce high, middle and low grade biscuit with nice plasticity and extensibility. Keep clear shapely print pattern. Improve the product appearance etc.
2. Pharmaceutical industry
Serratiopeptidase strong ability to decompose mucopolysaccharide and get rid of sputum, suitable to treat chronic bronchitis, bronchiectasia, cough and other respiratory disease. It have a good effect onpostoperative adhesion, decrustation and thrombophlebitis etc.
3. Feed industry: this protease can be used together withα—amylase, acid protease, cellulose and glucoamylase. Can widely used to feed the pig, poultry and fish.
4. Leather depilation: deplicated by neutral protease（35—42℃， PH7.5，20—25u/ml）→ washing → picking→tanning.
5. Film recycling: 45℃， PH7.0—7.5，use 20—23u/ml to recycling.
6. Silk degumming: preprocessing →dehydrating→ acid treating（neutral protease 18—24u/ml，soap 0.75%，48—50℃，30—60 minutes.，PH7.0—8.0）→dehydrating→ washing →dehydrating →shaking → baking →shaking.
Stability
In different storage conditions, 6 months neutral protease activity situation: 4℃ the activity loss 2―10％；normal temperature activity loss 10―15％. So we suggest it should keep it under low temperature in refrigerator or keep in dark place low temperature. Considering the temperature change may effect the activity during packing and delivery, our company would rise the activity by 5-10% to avoid the activity error after it arrive to customer.
