L - methionine, also known as L-methionine, is the levorotatory form of methionine; colorless or white luster flaky crystal or white crystalline powder, slightly special smell, slightly bitter taste. Unstable to strong acid, can cause demethylation. Soluble in water (5.6g/100mL, 30 ℃), warm dilute ethanol, alkaline solution or dilute inorganic acid. Hardly soluble in ethanol, hardly soluble in ethyl ether.
