What is Lactase?
Lactase, also known as beta-galactosidase hydrolysis of lactose to produce glucose and galactose. Lactase also has the transfer function of galactosidase, galactose to lactose generated galactooligosaccharide, as a bacteria-acting factors for the development of functional foods.
