1.Tinh Tam Tra Lotus Flavoured Tea ingredients:


 


We manufacture Tinh Tam Tra Lotus Flavored Tea using a selection of 100-petal lotus flowers so called “Bach Diep Lien Hoa” and 2 special teas originating from either hills in Tan Cuong Thai Nguyen or century-old tea trees in Ta Xua village of Bac Yen Son La based in the North of Vietnam.


 


2. Manufacturing process:


 


The 100 petal-lotus flower is deemed as a specialty of Vietnam in general and of West Lake of Hanoi city in particular.  The annual output is estimated at about 30,000 pieces from West Lake.  Those who have the opportunity to visit this spot of beauty during May might definitely admire the charm of “ Bach Diep Lien Hoa” symbolizing the National Flower of Vietnam.  In addition, there is a chance of enjoying the unique aroma of this cluster flower.  As a matter of fact, most flowers called “Lotus”, which are cultivated throughout the country from the North Delta to Thua Thien Hue and from Da Nang to Dong Thap Muoi in Dong Thap province, are actually “Hoa Quy”, characterized by 15 to 20 petals whereas “Bach Diep Lien Hoa” has up to 100 petals.  More importantly, the aroma of this flower smells extremely strong while “Bach Diep Lien Hoa” is moderately fragrant.  Hence we use just only “Bach Diep Lien Hoa” to produce “Tinh Tam Tra Lotus Flavoured Tea”.


 


There are 2 main stages in the production process of Lotus Flavoured Tea:


 


a. Traditional production by hand


 


In the early morning at around 3 to 4 am when it is just at dawn, our workers sail to the lotus ponds in the vicinity of West Lake to pick the lotus branches on which flowers are beautifully smiling at the water mirror under the mist.  The fresh lotus which is to be harvested to make Lotus Flavored Tea must be large.  Moreover, the lotus rice must be white in colour and the characteristic aroma must be fragrant.  The petals have to be intact and the stalks must remain green.  The good quality lotus leaves are carefully selected and harvested for the incoming work of packing tea.  The lotus leaves used to wrap tea should be large to help packaging and preserve the content.  After harvest, lotus stems are bundled into 10-flower bunches for the safest transport to our workshop for processing.  Next every layer of a flower’s petals is gently separated from the pistil and then as many as 25 grams of tea are put on the stigma.  We roll the petals at the top of the flower in a way that helps tea fit inside and absorb all the lotus fragrance from petals, rice, radio and pistil. Then we use fresh lotus leaves to neatly wrap both lotus and tea and then tie the whole content into a semi-finished teapot by use of a bamboo string or a straw.  We then arrange all the lotus flowers with the tea inside in big flowerpots to be kept fresh during the process of releasing fragrance into the tea.


 


Dawn is the best time to feed the tea into the whole fresh lotus flower. The reason is that the newly picked “Bach Diep Lien Hoa” is still both fresh and fragrant at that time, which allows more flavor to be absorbed into the tea much more easily than in the afternoon when there is a risk that the lotus flavour might fly away partially and when the lotus closes its wings according to a phenomenon in connection to conditioned reflexes, making it hard to perform the operation on tea. The lotus flowers with tea inside are to be plugged in water and left there for 24 hours.  After that we cut off the flower stem and we wrap the top of the lotus flower with a plastic wrap. The semi- finished lotus flavoured “future teapot” has been completed, and the flavour safely prevented from flying away.


 


b. Industrial manufacturing stage


 


Once the manual production process has been finished we proceed with the industrial manufacturing stage.


 


The traditional manual process results in a fresh lotus flower, filled with tea and put in a plastic wrap.  We continue to carry out industrial work by putting this semi-product in a freezer with antibacterial Nano technology.  The product remains in the freezer for 1 to 2 months.  During that time the tea is naturally fermented in the freezer and preserved in an optimal way so as to prevent bacteria, mold and so on from invading.  The Vietnam National Institute for Food Safety and Controlunder the Ministry of Health issued Survey Report No 10979/PKN-VKNQG to certify that there is no mold in our product.


 


We put the tea-soaked lotus into a freeze dryer where the product temperature is brought down to minus -30°C and water is almost completely withdrawn from both the lotus and the tea.  This process reduces the moisture content to only 3- 5%.  The freeze drying process is carried out within 24 hours.  As a result our product reaches the moisture content of 4.9% as indicated in the recently above mentioned Survey Report.


 


The next step is to separate the tea soaked with the lotus fragrance and the lotus flower into two separate tea lots, “Lotus Flavored Tea” and “Lotus Tea”.  Then we proceed with the bagging process.


 


Each small bag of “Lotus Flavored Tea” has a net weight of 50 grams.  Each small bag of “Lotus Tea”, containing two dried lotus flowers, has a net weight of 15 grams.  Two small bags, one each of “Lotus Flavored Tea” and “Lotus Tea”, are then placed into a master bag, along with two plastic tea clips.  Finally we seal the master bag with a heat gsenerator.


 


Packaging specifications:


 


The small bag is 18 x 6 cm in green and purple colour.  The outside of the bag is printed with Brand Name ”Tinh Tam Tra”, the image of Quan Am Buddha holding a lotus in her hand and a QR stamp.


 


The master bag measures 25 x10 cm.  The outside of it is printed with Brand Name “Tinh Tam Tra”, the image of Quan Am Buddha holding a lotus flower in her hand, a QR code and the information on the product.  This bag is a special kind of packaging which consists of three layers:  the outer layer is Kraft paper, then the plastic layer and finally the silver film to preserve the product in an optimal way during use.


 


3. How to prepare your teas


 


a.       Rinse teapot and cups with boiling water (carefully rinse twice with boiling water to keep the teapot and the teacups clean)


 


b.       If you make tea using a mixture of two types of “Lotus Flavored Tea” and "Lotus Tea", please note the lotus petals should be removed.  In other words, use the tea only with pistil and lotus rice for the preparation of your tea in order to enjoy the characteristic aroma and taste of “Tinh Tam Tra Lotus Flavored Tea”.  Our “Lotus Tea” has a different taste and fragrance from that of “Tinh Tam Tra Lotus Flavored Tea”.


 


c.       Rinse the tea with wam water at a temperature of 30° C to 40° C so that the amount of water is approximately equal to that of tea in the teapot/kettle.  Next shake it for 5 to 10 seconds and then discard the portion of water to purify the tea.  Keep the tea in the hot water at a temperature of 80°C to 90°C for 3 to 5 minutes brew.  Pour boiling water over the lid of the teapot not only to make the heat transfer from outside to inside but also to prevent the fragrance from seeping out.  Be careful not to open the kettle lid during the brewing process.


 


d.      Pour the tea into your cup(s) to enjoy the pure delicious taste and fragrance of “Tinh Tam Tra Tea”.


 


4. How to preserve your teas


 


Any unused tea bags should be sealed using a tea clip to temporarily close the bag to help preserve “Tinh Tam Tra Teas” for future use.


 


According to the tea drinking culture, drinkers have the habit of ”waking up tea” or “rinsing tea” with boiling water.  Since our lotus flavored tea is a tea with both aroma and flavor/taste, rinsing the tea will not affect the quality of the product.  However, the lotus flavor in the tea will slightly be reduced, resulting in a fainter lotus perfume which is preferred by some drinkers.


 


Each bag of “Tinh Tam Tra Lotus Flavored Tea, net weight 50 grams, can be used to serve as many as 45 to 50 customers, depending on individual tastes.
