Lipase is a kind of serine hydrolyses which can catalyze hydrolysis fatty glyceride generate Glycerinum and fatty acid. The important character of hydrolysis reaction is proceeded in oil-water interface. Lipase can also catalyze the synthesis of ester and ester exchange reaction.

1. Product Standard: GB/T 23535-2009.

2. Definition of Activity: 1g solid enzyme (or 1mL liquid enzyme), under specific temperature and pH level, when put through the process of zymolyte hydrolysis for 1 min will produce 1 μmol of titratable fatty acid. This is defined as 1 unit of enzyme activity and is shown as u/g (u/mL).

3. Working Temperature: 30°c-70°c (Effective), 55°c-65°c (Optimum).

4. Working pH: 2.5-11.0 (Effective), 3.3-4.0 (Optimum).

5. Ca²⁺ and Mg²⁺ have increasing effect on enzyme activity; Zn²⁺, Fe²⁺ and Hg²⁺have inhibiting effect on enzyme activity. Cu²⁺ and EDTA has less effect on enzyme activity

1. In Flour product, Lipase can be used to repair the weak connection part, so can improve the paste stability and gas holding capacity, and make bread core white and luster, appearance of steam buns are white-bright. Recommended dosage:0.01-0.05kg/ton flour (100,000u/g). Lipase use cooperatively with Xylanase, Fungal α-Amylase, Glucose oxidase can complex improve the flour products’ quality.

2. In leather-working, Lipase fully applied to leather’s fat, evenly soften raw materials on the warm condition, on the basis of reducing the chemical dosage to increase yield of leather, decrease the leather face winkle, make the effect clear. Lipase usually used in decreasing and softening process, recommended dosage: 0.02-0.06% (in terms of raw materials quality, enzyme activity is 100,000 u/ml(u/g)). Lipase usually mix with alkaline protease can optimize the use effect.

3. Add Lipase in Fodder can release the short-chain fatty acid, raising utilization ratio of raw materials, improve the fodder flavor, general dosage:0.01-0.05kg/ton (100,000u/g).

4. In paper-making, Lipase can be used to remove the triglycerides in mechanical pulping, and improve deinking rate of waste paper deinking. Dosage 0.04-0.1kg/ton pulp(100,000u/g).
