M D M, mechanically deboned meat, is also known as MSM (mechanically separated meat) or MRM (mechanically recovered meat). It is produced by mechanically separating remaining muscle tissue from the chicken carcass after removing the wings, legs, breast and skin. Chicken necks are also used sometimes in the production of M D M.  Chicken M D M is widely used as a major ingredient in many processed meat products. It’s also used in some Middle Eastern foods such as Kebabs and Koftas.
