Summary:


Glucoamylase enzymes are made by submerged fermentation of Aspergilus niger.


 


Theory:


Glucoamylases, can hydrolyze starch from non-reducing end to hydrolyze α-1.4 glucosidic bonds to produce glucose, and slowly hydrolyze α-1.6 glucosidic bonds to convert to glucose. It can also hydrolyze dextrin, releasing β-D-glucose at the non-reducing end of glycogen.


 


Characteristics:


1. Temperature range: the effective temperature range is 40-70 ℃, and the optimum temperature range is 60-65 ℃;
2. PH value range: effective PH range 3.0-5.5, optimal PH value range 4.2-4.6;
3. The effect of metal ions on enzyme activity: Mg2 + has an activation effect on the enzyme, and Cu2 +, Zn2 +, Mn2 +, Fe2 + has an inhibitory effect.

1. Product specifications: The liquid type is transparent liquid, 150000u / g. Solid enzyme fineness (0.4mm standard sieve pass rate): ≥80%.
2. Definition of enzyme activity: 1 gram of enzyme powder hydrolyzes soluble starch to produce 1 mg of glucose in 1 hour at pH 4.6. It is 1 unit of enzyme activity (U), symbol is u / g.
3. Product standards: The People's Republic of China Industry Standard GB 8276-2006 is implemented.


 


 Application:


1. Alcohol industry: the raw materials are cooled to 60 ℃ by cooking, the PH value is adjusted to about 4.0-4.5, saccharification enzyme is added, and the reference dosage is 80-200 units / G of raw material, keep it warm for 30-60 minutes, and enter fermentation after cooling.
2. Starch sugar industry: After the raw material is liquefied, adjust the PH value to about 4.0-4.5, cool to 60 ℃, add saccharification enzyme, the reference dosage is 100-300 Unit / gram of raw material, heat preservation and saccharification


3. Beer industry: When producing "dry beer", adding saccharification enzymes before saccharification or fermentation can increase the degree of fermentation.
4. Brewing industry: In the production of liquors such as liquor, rice wine, koji liquor, the use of enzymes instead of koji can improve the production of liquor and is used in the vinegar industry.
