Product Description
+ By allowing native starches reacting with Acetic Anhydride or VinylAcetate, starch acetate are achieved. Ester groups are efficient in preventing amylase retrogradation. This modification prevents gelling and weeping and maintain textural appearance. This also improves free– thaw stability, improve the water holding capacity and lower gelatinization
temperature of the starch, peak viscosity is slightly increased and clarity of gel is improved.

+ The result of this treatment is a stable starch that will produce pastes that withstand several freeze-thaw cycles and prevent synergism occurs.

+ Such low gelatinization temperature and easy dispersion is important in cooking starch slurry.

+ Viscosity stability prevents syneresis and the development of cloudiness at low temperature. Various applications with acetylated starch in food as texturing agents and provide good freeze–thaw stability.

+Extended applications are found by acetylated starch in conjunction with cross-link starch, such as; noodle product, fish- ball, Sausage and ham, Frozen foods In paper industry, Acetylated starch can provide an extremely good
viscosity stability.
