Production Process Description: | The process begins with careful selection of raw material, that once in our facilities we proceed to the manual classified according to their weight to make the process as uniform as possible, the parts pass the next stage of salting where salt is incorporated into the room. After the salting stage is subjected to the pieces to the 1st stage of drying, with a duration of 4 months in which the conditions of temperature and humidity are carefully controlled. After this drying phase 1, is passed to the natural aging cellars, where the ham ends his healing phase. This process is a completely handmade and natural. | |
