We carefully selected the 1st harvest tea of Yabukita cultivars from Kawane, Shizuoka. 
The Kawane-cha is tea grown and produced in Kawane-Honcho, which is located right in the middle of the Shizuoka prefecture. The tea must be purely 100% made from tea leaves in this area to carry the name Kawane-cha.


 


We also carefully selected yuzu from Kochi prefecture and make it into pure yuzu juice powder. We blend the matcha powder and yuzu juice powder with a 5% blending ratio.


 


Yuzu is an aromatic citrus fruit that loved by Japanese people. Yuzu can be used in various ways that you can add to any foods or drinks, like Yuzu Matcha, Yuzu Latte, Yuzu Cake, etc. Yuzu is rich in vitamin C. One yuzu can provide almost all the vitamin C you need for a day. Vitamin C helps improve physical, mental health and immunity. 1. Sift 1 teaspoon of Yuzu Matcha into a tea bowl


2. Pour some hot water and whisk it with a Japanese chasen tea whisk


3. Separately heat some milk and pour the matcha on the milk.

NATURAL TEA PLANTATION FROM UJI, KYOTO, JAPAN


Wazuka Town, where tea fields spread in the mountains in the southern part of Kyoto Prefecture. It has been a production area of the finest Uji sencha for over 1,000 years. In the Edo period, the Uji green tea was even delivered to the Imperial Palace. Uji has been producing Tencha since the past. There is a history of research on cultivation, manufacturing and processing technologies. are suitable for tea cultivation. Clear air, the natural conditions such as climate, soil and the fog from Wazuka River bring out the umami of tea and it is said to be the most suitable place for tea cultivation.

SELECTION OF GREEN TEA


 


We have collaborated with local tea masters and we have a delightful tea plantation that has been protected by the tea farmers for over 350 years since the Genroku era. Without damaging the environment and to provide the finest taste, the tea farmers work to expand the production of organic green tea. The tea master visually sorts the tea leaves, then adds hot water and checks the aroma, taste and the color of tea. As a point of making matcha, the color of the tea leaves is essential. The color of the tea leaves soaked in hot water at the time of inspection will be the color when crushed.

FROM TENCHA TO MATCHA


Tencha
The tea master chose two varieties of finest tea leaves, Saemidori and Okumidori as it has a brilliant green color and elegant sweetness. Tea master carefully blending these two varieties of tea leaves, the blending ratio changes every year according to its characteristics including color, aroma and taste. The judgement criteria of matcha are the color, the taste is not astringent, mellow and the rich scent.


Matcha
Premium ceremonial grade matcha is characterized by its refined and hearty taste, which gives it a deep and sweet fragrance. It has almost no astringency and you can feel the richness of the flavor. Some people may think that matcha is astringent but in fact premium grade matcha has a rich sweetness. This is a taste created by enriching the umami ingredient "theanine" by covering the tea leaves well from the sunlight.

Tea Ceremony
Uji has long been famous as a tea-producing region. There are some proverbs about Japanese green tea such as “Don’t break up with morning tea”, “Morning tea will increase your fortune”. Chanoyu is a traditional behavior for enjoying green tea since the late 16th century. Later on it officially became a ceremony of the Edo Shogunate and an essential part among the Japanese samurai. Nowadays, we can easily enjoy matcha in our daily life.
