Chestnuts have been for centuries a valuable resource for the survival of the population living in many areas of Asia, South Europe, North Africa, and of most countries bordering the Mediterranean Sea.
The nuts of Castanea Sativa in Europe and of Castanea Mollissima and Castanea Crenata in Asia were "daily bread" and dried, store food for the whole year. In North America C. Dentata, a forest giant was a dominant species in the broad-leaves forests before blight destroyed it.
There are main species of chestnut:
C. Crenata (Japanese): Small to medium sized tree (up to 10m tall and 15m wide), typically with many wide spreading branches. Growing rapidly, fruiting sometimes observed on the second and fourth year. Produce large nuts, whose skins are often difficult to remove.
C. Dentata (American): The largest growing and straightest-trunked of all the chestnut species. Tree up to 30 m, leaves oblong, pointed, coarsely toothed, 12-24 cm long. The nuts are typically very small, but quite sweet and easily peeled. Chestnut blight has decimated this species in its native environment. Content of proteins and fats, far exceed other varieties of chestnut.
C. Mollissima (Chinese): tree up to 20 m, with a broad crown, often multi branched and wide spreading. The nuts come in a wide range of sizes, but are typically smaller and easier to peel than C.Crenata.
C. Sativa (European): C. Sativa attains a height of 20-35 m, with a trunk often 2 m in diameter. It’s a wide-spreading tree originating from Turkey and the Black Sea. Nuts are of different sizes, improved varieties of sweet chestnut, easy to clean and size larger than usual chestnut seed.

Chestnuts may be incorporated into various recipes, such as stuffing, vegetable dishes, casseroles, and desserts. Dried chestnuts can be ground into flour as a substitute for wheat flour or corn meal. Chestnuts can also be used to make gluten-free chestnut flour for sale as a specialty food.
China is the largest producer of chestnuts, but their total production and consumption is difficult to measure. Traditional production is based upon some 50 cultivars of the Chinese chestnut.
