Kombu Tsukudani
We make tsukudani with a subtle flavor in which the sweet kombu takes on the modest kick of ginger, but without the distinctive soy sauce saltiness of shio kombu. The sweet and spicy ginger accent will keep you coming back for more. We use a variety of kombu kelp harvested in Hokkaido called makombu. Makombu has thick leaves with a sweet flavor. In Japan, the kombu harvest has been declining year by year, but it remains a prized ingredient. The kombu is slow cooked in a steamer for three hours, giving it a tender, springy texture. We use freshly harvested ginger produced in Kochi Prefecture. Kochi Prefecture is Japan’s number one producer of ginger, and this fresh ginger, which is purchase directly from Kochi and only available in summer, is given a sweet and spicy flavor. We use no additives for flavorings, so it has a clean flavor with no lingering aftertaste. Ginger is said to improve circulation and warm the body, and it will heat up a body chilled by winter cold or summer air conditioning from the inside.
