Hitofuri Kombu (Seasoning Powder)
Shakeable dried kombu kelp cooked in soy sauce. This seasoning powder is made with wild-grown makombu kelp from southern Hokkaido, and lets you get the full experience of the savory flavor of kombu. We use a variety of kombu kelp harvested in Hokkaido called makombu. Makombu has thick leaves with a sweet flavor. In Japan, the kombu harvest has been declining year by year, but it remains a prized ingredient. This kombu is slow cooked in a steamer until tender, then dried. The drying takes advantage of the tender steamed kombu, so we are careful not to over-dry it. When the drying is finished, we chop it finely to make seasoning powder called furikake. Though the grains are fine, the thickness and flavor of the kombu are definitely noticeable. In addition to shaking it over boiled white rice, this seasoning pairs well with a variety of other foods, so you can shake a few dashes onto a dish to add savory flavor. Please enjoy experimenting with all kinds of foods. The bottled type is the most common, but it is also available in flat rectangular cases, and small packages for use in packed lunches. We can also repackage it for commercial use or in packets. We also have version that uses gluten-free soy sauce in order to appeal to those with wheat allergies. Our product varieties include plain, seven spice kombu with arare rice crackers, additive-free kombu seasoning powder, and gluten-free kombu seasoning powder.
