Chirimen Sansho
For our Chirimen Sansho, we are particular about the sansho pepper. We use a only a variety called Asakura sansho. It is grown in Tamba. Asakura sansho peppercorns are large, with a strong fruity aroma, and there are surviving records of this high-grade sansho pepper being offered as a gift to the shogun Tokugawa Ieyasu.

1) Kobe-style Additive-free Chirimen Sansho: Dried young sardines and sansho pepper with a simple flavor. It is seasoned simply with soy sauce, sake, sugar, and salt. The simple flavor lets the taste of the dried young sardines come through clearly. The sansho pepper has an elegant aroma as well.

2) Kyoto-style Additive-free Chirimen Sansho: Made with supervision by restaurant chefs! Tender chirimen sansho made with carefully selected dried young sardines cooked without sugar for a clean flavor. The sansho pepper is added after cooking, so this tsukudani has an appealing bright green color. It also contains more sansho pepper than the other three varieties, so this is the perfect Chirimen Sansho for sansho pepper lovers.

3) Chirimen Sansho: Dried young sardines with sansho pepper cooked with the old-fashioned sweet and spicy flavor. While it is well-seasoned, it contains no thickeners, etc., so the distribution of flavoring varies. This chirimen sansho is perfect to enjoy with steamed rice.

4) Hitofuri Ojako: A dry type of chirimen sansho. Like the Kobe-style Additive-free Chirimen Sansho it has a simple flavor. It is great mixed with rice, as a salad topping, or with pasta.
