■About Hidaka kelp
Hidaka Kelp produced in the Hidaka region of Hokkaido(JAPAN)
scientific name is also called "MITSUISHI" kelp.
This is characterized by a rich broth stock.
It has less sweetness and an elegant flavor compared to other kelp.
It boils quickly,it is a convenient kelp that can be used for kelp rolls,
simmered dishes, oden, etc. after taking the broth.
■How to use
Boiled・・・
After rehydrating the dried kelp in water for about 1 hour,
heat it until just before boiling. Remove the kelp and you're done.
Recommended for deep-tasting dishes
Water out ・・・
Soak the dried kelp in water for at least 8 hours (overnight),
and then remove the kelp to complete the process.
Recommended for Japanese soup
The amount of umami ingredients does not change with these two methods.
However, you can make more delicious dishes by properly using whether the infusion is water or not depending on the dish.
