What kind of sake is it?
It has an elegant taste with fruitiness in its transparency.
syoujyounomai
It is made from 40% polished Yamada Nishiki, a locally grown rice suitable for sake brewing.
It is a Junmai Daiginjo with a mild ginjo aroma and a slightly rich flavor.
Award
It was awarded first place overall in the Junmai Daiginjo category by over 100 judges of the 2005 Shiga Prefecture Sake Brewing Technology Study Group.
Daiginjo-shu is made from the highest quality rice (Yamada-nishiki, etc.), which has been polished to more than half its original size, and fermented at low temperatures for a long period of time during the winter brewing season. The resulting sake is different from other types of sake in that it has a lighter quality and a fruity aroma (ginjo aroma).
