Products Description


Organic cooking sake and organic mirin type are manufactured using organic rice and natural sea salt considering sustainability towards the enviroment.
Mirin is a seasoning using a unique Japanese raw material called "Rice Koji".
Glutinous rice is decomposed by proteolytic enzymes and saccharifying enzymes contained in rice Koji to produce savory components (mainly amino acids and organic acids) and sweetness (mainly glucoses).
The aging period requires 40 to 60 days, and we observe the activity in the control environment for the function of the natural enzymes contained in the koji.



Cooking Sake is one of the typical seasonings using rice Koji, which is the basis of Japanese food culture. Rice Koji is manufactured by culturing safe and pure Aspergillus for about 2 days while controlling the temperature and humidity.
The rice Koji contains a large amount of enzyme components centered on amylase and protease, and the Japanese brewing culture has been using this method traditionally.
