Leonardo has often been described as the archetype of the Renaissance Man, he leaded the Italian Renaissance to its higher forms of expression in the various fields of art and knowledge.
He is considered one of the greatest geniuses of mankind.
Torrefazione Caffé Leonardo is on the market since 1963: an artisan company bound to the old traditions and supported by a young and dynamic staff.
Its excellent reputation and high professionalism come from the quality of its blends, the diligent attention paid to the customer service and to the values of human relationships Thanks to the great experience handed down from generation to generation, our technicians personally oversee the selection of the products with capacity and great preparation. Treasuring the secrets of mixtures of coffee and the roasting process; adopting natural techniques in the production; air cooling and leaving roasted coffee to stand at least 3 to 4 days silos before grounding and packaging.

The art of roasting


The coffee flavor, the characteristics of the drink, his body, its degree of acidity depend on the process of transformation.
The experience acquired in this area has allowed our company to develop specific courses of roasting and blending shades unique in terms of body, sweetness and fragrance.
The process of roasting temperature is 180 °.
Warm air currents affectes the beans in a large drum agitated to remove residual moisture.
During the first phase of the roasting process, the raw beans begin to absorb heat, dry slowly, taking a golden color, while forming a lovely scent of roasted coffee.
During the second phase, the grain acquires 60% of its volume and takes a slightly brown color. The temperature continues to rise, the color darkens, the grain loses about 18% of its weight and becomes brittle.
The main changes that occur in coffee during this phase are: weight loss of 15-20% due to evaporation of water and some volatile substances, increase in volume compared to the raw product, the formation of a brown - blackened due to carbonization of cellulose and caramelization of sugars, appears on the surface of the grains, a brownish oil (the caffeine) that determines the characteristic flavor, and finally a slight loss of caffeine due to heat.
