What is Soy Lecithin?
Soybean Lecithin, also known as phosphatidylcholine, is a lipid formed by the dehydration and condensation of glycerol, fatty acid (two molecules), phosphoric acid and choline. The fatty acid chain in the molecule has two types of saturated and unsaturated Chemicalbook.
