Application
Food grade sodium polyacrylate
(1) Enhance the protein adhesion in raw flour.
(2) Make starch particles combine with each other, disperse and penetrate into the network structure of protein.
(3) Form dense dough with smooth and shiny surface.
(4) Form a stable dough colloid to prevent the exudation of soluble starch.
(5) Strong water retention, keep the water evenly in the dough and prevent drying.
(6) Improve the ductility of dough.
(7) The oil components in the raw materials are stably dispersed into the dough.
