Sodium dehydroacetate is a broad-spectrum, bacteriostatic food preservative, and has a particularly strong inhibitory ability against mold and yeast. Under the same amount of addition, the bacteriostatic effect of sodium dehydroacetate is higher than that of sodium benzoate, which is now widely used, and potassium sorbate is several times or even dozens of times. It is especially valuable that it has little inhibitory effect on acid-producing bacteria, especially lactic acid bacteria.

Sodium dehydroacetate is suitable for antiseptic and mildew prevention of curd, assorted pickles, kimchi, sauerkraut, raw fruit juice, concentrated fruit juice, fruit wine, cheese, cream, margarine, yogurt, lactic acid drinks, carbonated drinks, bean paste paste, bread, mooncakes, pastries, sweet pastries, canned food, condiments and other products. Especially for lactic acid drinks, kimchi, sauerkraut, pickles and other products that need to inhibit other harmful bacteria as much as possible, and less inhibit beneficial lactic acid bacteria.
