Lactase, also known as β- Galactosidase. It can hydrolyze lactose to produce galactose and glucose. Lactase also has the transfer function of galactoside, which can connect galactose to lactose to generate galactooligosaccharide that can be used as a probiotic factor in the development of functional food.

Functions of Lactase

used in fermentation and food industry.

Dosage of Lactase
Recommended dosage is 0.03%-0.16% raw material. The optimal dosage should be determined through experiments.
