Food grade pectinase is refined from Aspergillus Niger by deep liquid fermentation and ultrafiltration. This product has good hydrolytic activity in the acidic pH range (pH33-4.0).




Pectinase can degrade pectin, a complex enzyme system composed of different enzymes, the main components are as follows:
(1)Protopectinase: hydrolyzes insoluble propectin into water-soluble pectin, severing the chemical bond between polymethoxygalacturonic acid and arabinose.
(2) Polygalacturonase: This enzyme can cut the a-1, 4 glucoside bond of pectinic acid and promote the hydrolysis of polygalacturonase chain. According to the hydrolysis mechanism, it is divided into two types: Polygalacturonic acid exonuclease (exo-PG1, EC3.2.1.67), exo-PG2, EC3.2.1.82) polygalactoaldehyde endonuclease (Endo-PG,EC32.1.15), endonuclease hydrolyzed A-1, 4 bonds from the inside of the molecule irregularly, resulting in a rapid decrease in the viscosity of pectin or pectic acid; Exonuclease hydrolyzes the a-14 bond one by one from the end of the molecule to produce galacturonic acid.
(3) Lyase: Through trans-elimination cleavage of pectin polymers, lyase breaks the glycoside bond at the C-4 position, while eliminating an H atom from C-5 to produce an unsaturated product. They were divided into endo-PGL (EC4.2.2.2), exo-PGL (EC 4.2.2.9), endo-polypectin lyase (endo-PL,EC422.10) and endo-polymethylgalacturonase (endo-PMG).
(4) Pectinesterase (EC31.111): It can randomly remove the ester bond between methoxy and galacturonic acid in water-soluble pectin molecules to produce methanol and free carboxyl groups.





Pectinase (60,000 u/g food grade) is mainly used in fruit and vegetable juice processing.
