Vacuum-packed Plain Broiled Eel (1 eel approx. 165g x 60 eels)
The Osumi Peninsula in Kagoshima Prefecture is proud to be Japan's largest producer of eels. Thanks to the temperate climate and high-quality mineral-rich underground water, our farm-raising methods “go above natural” to keep the eels from getting stressed, which has led the way to produce eels that are surprisingly easy to enjoy.
We work together with eel farmers in Osaki, Kagoshima Prefecture in a completely integrated system with strict control over quality and sanitation (ISO 22000 certified), which forms the basis for the special focus we place on producing "safe, reliable, and delicious eels."
After raising them for about one year, our eels are brought in live from the farm for our skilled artisans to cut by hand, and from there they are slowly cooked over a powerful flame and them steamed after that to bring out their inherent savory umami flavor.

■Production Process
[Taste Testing]

All eels, which are raised to a size suitable to ship, are subjected to taste testing and
chemical inspections, and only the eels that pass these are accepted.

[Cutting]
The eels are processed, drained and cut on ice to preserve their freshness.

[Broiling (Plain without seasoning or added flavors)]
We broil them while checking how cooked they are on the skin side first and then on the flesh side.

[Steaming]
By slowly steaming the eels for an extended period, the excess fat is removed to make for soft, plump eel meat.

[Broiling (Kabayaki soy glaze broiling)]
The process of dipping the eels in sauce and broiling them is repeated four times to make kabayaki.

[Quick Freezing]
We quick-freeze the eels in a -45℃ freezer to preserve their freshly cooked quality.

Osaki eels are raised in the “blessed water” that gushes forth from the Shirasu Plateau.
The rainfall that lands on the rich forests is filtered into the ground, which eventually becomes clear underground water.
Our eel farm expands out and is rich with this highly refined water to create an environment that goes “above natural” thanks to our complete control of water quality and temperature 24 hours a day and 365 days a year.
No efforts are spared to raise eels that offer a delicious taste, which is the fruit of our tireless hard work and passion.
