These aged, hand-pulled junnama noodles with a chewy texture are pulled with care by skilled artisans for a full two days, moisturized again with steam and mist, and further aged to enrich the flavor.

(1) Attentive noodle production, using traditional hand-pulling and select ingredients
These noodles' ingredients are wheat flour from Kumamoto, pure subsoil water from Aso, and select salt from Akaho. Sogawa noodles are made with the choicest ingredients, using traditional hand-pulling. These hand-pulled noodles begin with dough kneading, then pass through twelve steps over the course of about two days. It involves traditional techniques and the laborious, time-consuming, attentive work of skilled artisans.

(2) "Junnama" is a highly aged, must-try noodle with an outstanding chewy texture.
The noodles are the pride of Sogawa, which adds a bit of extra effort to dry noodles for a uniquely chewy texture that goes down easily. The tastiness of junnama comes from a unique production method that uses steam and mist to enhance humidity while controlling temperature. Noodles that have been dried between two and a half and three hours are rehydrated in that environment, and are slowly aged again to draw out an outstanding deep taste.
