Description                                                                                                                                             



Gellan Gum is a kind of extra cellular polysaccharide excreted by microorganism Pseudomonas elodea. It is a linear structure with a repeating unit of tetrasaccharide. As a multi-functional gellingsuspending and thickening agent, it can be used individually as well as jointly with other products.


 


Gellan gum is a water-soluble anionic polysaccharide produced by the bacterium Sphingomonas elodea (the current taxonomic classification). It was originally identified as "Pseudomonas elodea" based on the taxonomic classification at the time of discovery. The gellan-producing bacterium was discovered and isolated by the former Kelco Division of Merck & Company, Inc. in 1978 from the lily plant tissue from a natural pond in Pennsylvania, USA. It was initially identified as a substitute gelling agent at significantly lower use level to replace agar in solid culture media for the growth of various microorganisms  Its initial commercial product with the trademark as "GELRITE" gellan gum, was subsequently identified as a suitable agar substitute as gelling agent in various clinical bacteriological media.

High Acyl Gellan Gum is Dark Yellow Powder.


 1.The solution made by high acyl gellan gum is not so clear and with lower transparency.


2.The gel strength of high acyl gellan gum is weak.
3.The gels formed by high acyl gellan gum are elastic and with low transparency.
4.The visocsity of high acyl gellan gum is higher than low acyl gellan gum so high acyl gellan gum can be as perfect thickening agent.


 


Remind Information of Application of Gellan Gum:


 1.Materials without salts can be directly added into water together with gellan gum.



2.Materials with salts(or kations) should be added only when gellan gum is thoroughly dissolved.
3.The water used should be deionized water.
4.The application of gellan gum should be in addition with KATIONS( Ca, Mg, Cl, and so on).
5.Gellan Gum is soluble in cool water but need to heat up to 85℃-90℃ for thoroughly dissolving.
6.The dosage of gellan gum should be adjusted according to pH, materials added and particle sizes of fruit pulps. The higher dosage, the better performance.

High Acyl Gellan Gum is dark yellow powder.


The gels formed by high acyl gellan gum is elastic.


The solution prepared by high acyl gellan gum is a little cloudy, not so clear as the ones prepared by low acyl gellan gum.


But, High Acyl Gellan Gum can be used as thickener as well as stabilizer. High Acyl Gellan Gum is widely applied in yoghurt, ice cream, sausages, fruit and vegetable juice , soybean milk and dairy drinks.
