What is blue tempered?
It is high grade steel which was developed in Japan to be used for pots and pans.
The tempering process protects the steel from rusting and a fine layer of black iron oxide is bonded to the surface.
This allows oil to penetrate into the surface of the pan.
This is makes the pan easier to clean and promotes its non-stick properties.
There is no need to season the pan but is should be washed thoroughly before the first use.
