Our quality-assurance begins on the farms. Our supplying farms are selected by their adherence to quality control, farm location and the implementation of bean-quality guidelines. Our seedlings are selected, ensuring that only the best planting material is used. The coffee is sun-ripened in the ideal conditions of the slopes of the Blue Mountain, and hand-selected by trained reapers who pick only the best cherry red coffee. The coffee berries are then pre-floated before the pulping process begins under the guidance of the Jamaica Coffee Industry Board's Quality Control Department. After pulping and drying, we rest our coffee for approximately eight weeks, after which the best beans are selected based on size, density, color and appearance.
