Clearwater Arctic Surf Clams (Mactromeris polynyma), also popularly known as Hokkigai, are sweet and delicious with brilliant red tongues, ideal for sushi and sashimi dishes. Wild caught and sustainably harvested from the cold, clear waters of the Canadian North Atlantic, Clearwater’s Arctic Surf Clams are blanched and individually quick frozen (IQF) at sea within an hour of harvesting for ultimate freshness.
