Agar is a sea dao algae extract which is made from cauliflower or jiangduli (genus red algae) after being heated to dissolve and then cooled and solidified. Guan Zhuan is rich in dietary shu fiber (content is 80.9%), high in protein, low in calories, and has detoxification and beauty, purging fire, moisturizing intestines, lowering blood pressure, lowering blood sugar and preventing cancer. It is recognized by the UN Food and Agriculture Organization as 21 Century health food.
Agar is a mixture of a neutral, dominating polysaccharide called "Agarose" and a charged polymer called "Agaropectin". The agarose is composed of (1-4) linked 3,6-anhydro -a- - L - galactose alternating with (1-3) linked - b - D - galactose.
As a soluable jelly,especially in boiled water Agar has two states:strip and powder.Even lowed the density to 1%, Agar can still be relatively stable jelly,thus has an important character in industry,being the necessary materials in Food Industry,Chemical Industry and Medicine and Science Research.

Methods of fruit jelly:
Materials: Agar strip 5g, water 400ml, honey, sugar or rock sugar, fruit
Methods:
1. Cut the fruit into pieces or diced fruit according to the shape you need;
2. Take 5g agar strips, soak in warm water for about 3 hours, soften and drain
3. Take 400 ml of water, add agar strip, heat with low heat, let agar strip dissolve completely
4. Add appropriate amount of sugar or honey or sugar, stir well, let sugar dissolve completely
5. Pour a layer of boiled agar water into the mold or other containers, cool slightly, add diced fruit when it solidifies a little, and then pour into the second boiled agar water, wait for natural cooling or refrigerate to freeze and solidify!
6. After molding, it will be buckled out and put on the plate to enjoy the delicious fruit jelly.
