Products Description

Matcha is a traditional Japanese tea that has gained worldwide popularity for its distinctive flavor and rich nutritional value. Shiose's matcha mochi is an original Japanese confectionery made with traditional rice cake, richly flavored with high-quality matcha tea and filled with moderately sweet bean jam.

The finest matcha with bright color and deep flavor. The aromatic and high quality Uji matcha has a good balance of sweetness and astringency with an elegant and mellow taste. We use tea leaves grown in tea gardens in the misty mountains of Kyoto. Once plucked from the tea plantation (the tea leaves are covered in order to block sunlight, which concentrates the flavor compounds and enhances the color and taste), they are slowly dried in a special steaming furnace and refined into powdered tea. These tea leaves are used for Shiose's famous confections and are of guaranteed quality.

The traditional Japanese adzuki bean jam began with Shiose. Highly nutritious and low in fat, bean jam is attracting attention as a base for Japanese confectionery and a health food for its low calories, fat content, and presence of dietary fibers. "An" (bean jam) is made from beans that have received the ample blessings of the sun, and is itself a natural health food. It contains high levels of linoleic acid and linolenic acid, which are said to lower blood cholesterol, as well as vitamin E, which is said to prevent aging, B1, B2, and B6, whose deficiency is said to cause dermatitis and anemia. In addition, this health food is full with the blessings of protein, fat, fibers, iron, and calcium. We at Shiose use only Hokkaido adzuki beans and premium grade granulated sugar to make our bean jam, making it less sweet. Our artisans carefully handcraft sweets each day. Since our establishment in 1349, we have attracted the best clients, including emperors and generals. In modern times, our products are sold at Mitsukoshi, Takashimaya, and other high-end department stores, and are loved as gifts. We hope you'll enjoy this item.

Company Profile

Founded in 1349, Shiose is the oldest confectionery in Japan. We are one of the most traditional companies in Japan and a leading company that has shaped Japanese food culture. A descendant of the famous Chinese poet Lin Hejing, Shiose's first generation, Lin Jo-in, came to Japan from China in 1349. He was good at making steamed buns with meat, and created Japan's first sweet red bean paste and steamed buns with red bean paste for monks who could not eat meat. He settled in Nara and started a bun shop, and his buns became popular among the upper class and were later presented to the emperor, and spread throughout the country as the first Japanese confectionery. Since then, it has been loved by successive shoguns and received the title of "Japan's No. 1 Manju shop" from Shogun Ashikaga Yoshimasa and the family crest from Emperor Go-Tsuchimikado. In the Edo period (1603-1867), it was introduced in the guidebooks of the time as the best confectionery in Japan, and there are descriptions of people vying to buy it. Later, Shiose was the first confectioner to be appointed by the Ministry of the Imperial Household, and was often called upon by His Majesty to arrange festive banquets.

We are also well versed in the world of tea. Lin Soumi, a descendant of Lin Jo-in , studied tea under Sen no Rikyu, the most famous tea master in Japan, and took his granddaughter as his wife, who had a great influence on the tea ceremony.

Today, we are a food company using the material of Hokkaido, Japan, offering confections, teas, and healthy food products made from the finest Japanese ingredients. We, as the oldest food company in Japan, continue to challenge ourselves today to bring comfort to people's hearts through their eyes and tongue. We look forward to hearing from you.
