Terroir

The wines of A.O.C. Nuits-Saint-Georges are produced on terroirs defined in the communes of Nuits-Saint-Georges and Premeaux-Prissey. Soils, Jurassic formation, are mainly clay-limestone.

 

GRAPE VARIETY: Pinot Noir

ALCOHOL: 12,5%

KEEPING QUALITIES: 5 to 10 years.

Serving at 15 to 16°C. The previous uncorking, one or two hours before is advised. For wines that have remained young, decanting provides good oxygenation and improves tasting.

 

THE VINIFICATION

After the manual harvest, the grapes are placed between 2 and 4 days in stainless steel vats for pre-fermentation maceration. Then, the alcoholic fermentation is triggered thanks to the use of the only feet of tank. Malolactic fermentation and aging are done in oak barrels for 8 to 12 months.

 

THE TASTING:

Shallow dress, typical of Burgundian pinots. Very fine nose rather floral, evolving on notes of charming red fruits. The palate is fine and fresh, with an acid frame superbly married to the tannins. In the finish, the palate is full-bodied with aromas of red and black fruits.

 

ASSOCIATED DISHES

The power and structure of this wine allow it all associations with red wine sauces, marinated or roasted game, strong red meat, grilled or roasted and medium-flavored cheeses.
