Old White Tea Shou Mei
Plant: Camellia Sinensis
Brewing: Leaves are good size but much lighter and more delicate than that of Black, Oolong and Green Tea, therefore you should use more leaves per cup than with other teas (1 ½ -2 tsp per cup vs. 1 tsp of other teas).
Water Temperature: Between 170 and 185 degrees Fahrenheit (The more delicate the tea the lower the temperature.)
Steeping Time: 1-3 minutes.
Flavor: subtle, fresh, dissipating sweetness
Liquor: pale, straw colored
Drinking
It is best brewed using a teapot and strainer or stainless steel mesh tea ball. If using a tea ball allow room for tea leaf expansion by using one at least 2 inches in diameter for one 8 oz. cup. Use 2 tsp. of tea to brew one 8 oz. cup. Bring water to boil, remove from heat for 2-3 minutes. Water should be at 165-175 degrees. Brewing white teas at temperatures slightly less than boiling brings out the subtleties and sweetness. Brew for 2-3 minutes. This tea can be used for 3-4 infusions. Our teas have a natural sweetness and do not usually require sweeteners.
